Description
The Pommard Les Cras from Domaine de Montille is a Pinot Noir from a small parcel of just 0.5 hectares, ideally located on the upper part of the eponymous lieu-dit, between two Premier Crus. The name "Cras" comes from "coteau pierreux", referring to the stony and pebbly soils that give this wine a significant structure and a typical Pommard mineral character.
The winemaking process involves careful management of whole bunch fermentation, used for 33%, and aging that favors a balance between fruit expression and respect for the terroir. The domaine's viticulture has been certified organic since 1995 and has been practiced biodynamically since 2005, with full respect for the soil and the vine.
On tasting, it stands out for a nose of rare intensity, rich with notes of black cherry and blueberry; on the palate, it offers great concentration, substantial body, some firmness, and a depth that promises a beautiful evolution in the bottle.
Perfectly paired with braised beef or stewed game.
