What kind of wine is it
Pommard by Labouré-Roi is a still red wine made from Pinot Noir from the Côte de Beaune in Burgundy. It displays a full-bodied and bold profile, with a marked structure and a complexity derived from traditional winemaking and a period of barrique aging that supports the texture without overpowering the fruit.
Where does it come from
This wine is born in the village of Pommard, one of the best-known localities of the Côte de Beaune, located south of Beaune along the Route des Grands Crus. The vineyards are set between 250 and 330 meters above sea level and grow on various types of soils, including alluvial deposits, Jurassic marl, and limestone soils enriched with iron oxides.
How is it made
Production follows the Burgundian style: the grapes are harvested by hand, then selected, destemmed, and crushed. The must is transferred to temperature-controlled vats for cold maceration lasting 5–6 days; fermentation occurs with indigenous yeasts, with daily pump-overs and punch-downs. Aging takes place for 12 months in barrique, 30% of which is new oak.
Tasting notes
In the glass, it shows an intense dark ruby color. The nose is dense, with aromas of blackcurrant, cassis, blackberry, and cherry stone, followed by toasted, spicy, peppery notes and a hint of leather. On the palate it is structured, with chewy tannins and a velvety texture, finishing with a fruity and spicy persistence.
Food pairings
It pairs well with robust dishes: beef, lamb, and marinated game are supported by the tannic structure and spicy notes. It is also well-suited to a board of matured cheeses and sauced dishes, such as boeuf bourguignon, where intensity and fruity finish remain the focus.
