Description

The Minutolo BIO by Polvanera is an organic white wine made from pure Minutolo grapes, cultivated in the iron-rich red soils of the Crispiano area in Puglia. It comes from a native aromatic vine that is experiencing a renewed appreciation, thanks to its fresh and intensely fragrant profile.

The grapes are mechanically harvested in the first decade of September and undergo soft pressing. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature, followed by three months of aging in steel and two months in the bottle, to preserve its freshness and enhance its complexity.

It presents a straw yellow color with greenish reflections. On the nose, it expresses intense and fine aromas of bergamot, banana, nectarine, green apple, chamomile, and hawthorn, on a delicate musky base. On the palate, it is aromatic, with good structure, and a fresh-sapid vein that accompanies a persistent finish consistent with the olfactory sensations.

Served chilled, it is perfect paired with vegetable dishes, shellfish, or fresh cheeses.
