What kind of wine is it?
Recioto della Valpolicella by Roccolo Grassi is a sweet red meditation wine, produced from Corvina, Corvinone, Rondinella and Croatina grapes grown in Valpolicella. It stands out for its intense style and full structure, with a soft and enveloping sip. After a natural drying process, fermentation takes place in stainless steel at a controlled temperature, followed by ageing in French oak barriques and a long rest in the bottle, which develop complexity and harmony.
Where does it come from?
The grapes come from a 12-hectare vineyard in the heart of Valpolicella, in the province of Verona. The area boasts a long winemaking history, where the drying process, refined over centuries, has made Valpolicella’s sweet wines famous.
How is it produced?
The process begins with the natural drying of the grapes, concentrating sugars and aromas. This is followed by cold maceration for 6-7 days in stainless steel, then alcoholic fermentation at a controlled temperature for about 30 days. Malolactic fermentation occurs spontaneously in French oak barriques, where the wine ages for 18 months, then rests in the bottle for another 24 months. This enriches the profile and enhances aromatic complexity.
Tasting notes
In the glass, it shows an intense ruby red with garnet reflections. On the nose, it offers ripe plum, cherry jam, raspberry and blackcurrant, with notes of sweet tobacco, dark chocolate and spices. On the palate, sweetness is balanced by a full body and soft tannins. The persistence is long, with a finish recalling ripe fruit and spices.
Food pairing
It pairs well with creamy desserts based on dried fruit or chocolate, such as dark chocolate cakes and crème brûlée. For a savoury contrast, it works with blue cheeses or with a saffron risotto creamed with parmesan. Also excellent with traditional local sweets.
When to serve it
Recioto della Valpolicella by Roccolo Grassi is ready to drink to appreciate its sweetness and balance, but it can evolve in the bottle for several years. It is recommended to serve at a moderate temperature in large glasses, so that the aromatic profile is enhanced and the tasting experience is complete.
