Description
What kind of wine is it
O Equilibrio by Bodegas Fulcro is a fresh and vibrant white wine made from Albariño grapes grown in the Salnés subzone, in the heart of Rías Baixas. Its profile reveals lively structure, pronounced minerality, and citrus notes of lemon and grapefruit. Fermentation and aging take place in used French oak barriques and casks, providing a delicate approach that does not mask the varietal character. The absence of malolactic fermentation preserves the acidic tension, offering an immediate and pleasant sip.
Where does it come from
O Equilibrio is born in the Salnés subzone, a historic area of Rías Baixas in Galicia. Here, the humid Atlantic climate with mild winters and cool summers fosters slow ripening. Granite soils rich in quartz and feldspar ensure optimal drainage and impart vibrant minerality. The vineyards of the Salnés subzone benefit from marine influence, which tempers temperature variations and supports an aromatic balance with natural freshness.
How is it produced
After gentle pressing, the must ferments and ages in used French oak barriques and casks. The wine matures in barriques and casks for 12 months. The absence of malolactic fermentation preserves its natural acidity, while a light clarification before bottling safeguards its aromatic richness.
Tasting notes
Bright straw-yellow with greenish highlights. The nose is broad and precise, with notes of lemon and pink grapefruit, herbs like thyme and sage, and a hint of toasted almond from the wood. The palate is taut and fresh, with structure upheld by vibrant acidity. The finish is persistent, with saline returns and a mineral trail that invites another sip.
Food pairing
O Equilibrio pairs well with baked fish, gratinéed scallops, and shellfish in light sauces. It also works with semi-hard cheeses such as tetilla and San Simón, typical of Galicia.
Serving suggestions
O Equilibrio should be served chilled in medium-sized glasses to enhance its citrus and mineral components. Best enjoyed in the first years after harvest to appreciate its freshness, but its structure and acidity also allow for good aging.
