Description

Pazo de Seoane is a white wine originating from a skillful blend of Albariño, Loureiro, Caiño Blanco, and Treixadura, cultivated in proprietary vineyards located in the O Rosal subzone in Galicia. It is a wine that authentically interprets the soul of Val do Rosal, expressing a perfect balance between aromatic intensity, freshness, and regional typicality.

The harvest is carried out manually with an initial selection of the bunches in the vineyard, followed by swift transportation in refrigerated crates. After optical selection of the berries, the must is cooled to 10°C and pressed in an inert atmosphere to prevent oxidation. Fermentations are conducted separately at 15°C for each variety, followed by aging on the fine lees in suspension through bâtonnage, up to the final blend before bottling.

Visually, it presents a bright and lively greenish-yellow color. The nose offers a high aromatic intensity, with a predominance of floral notes typical of Loureiro, enriched by fruity scents of apricot and apple from Albariño, and a citrus and mineral background provided by Caiño. On the palate, it is lively, subtle, and balanced, with an elegant structure and a long and refined finish.

It pairs perfectly with appetizers, seafood, fish, fresh cheeses, oriental cuisine, rice, pasta, and poultry.
