Lalume by Dominio do Bibei is a white wine from Ribeira Sacra in Galicia, made exclusively from Treixadura grapes. The winemaking process involves controlled temperature fermentation and distinct management for each site, soil, and altitude, with passages through barriques, foudres, concrete, or steel. The result is a fresh and precise style, with a recognizable mineral profile and balanced structure.
Where it comes from
Ribeira Sacra is located inland in Galicia and features vineyards situated between 200 and 700 metres above sea level. The plots dedicated to Lalume are on granitic sands with clay components and the presence of schist, elements that contribute to a clean and vibrant palate sensation. Dominio do Bibei is based in the village of Langullo and adopts sustainable farming practices with a minimalist intervention philosophy, aimed at preserving the expression of its various terroirs.
How it is made
Treixadura grapes are fermented at controlled temperatures between 12 and 17 °C. Fermentation is separated by site, soil, and altitude, and takes place, depending on the lots, in barriques, foudres, concrete or steel tanks for a total period of 12 months. This is followed by ageing in stainless steel tanks in contact with fine lees, a practice that helps to develop complexity and aromatic depth while maintaining clarity and freshness.
Tasting notes
On the nose, aromas of pear and green apple are identifiable, followed by hints of moss and river stone, with a delicate mineral note. On the palate, the sip is balanced and lively, supported by a citrusy acidity that delivers an easy progression. The finish is persistent and returns to mineral sensations, leaving a crisp, clean close.
Food pairings
Lalume pairs naturally with seafood, especially in simple, savoury preparations. Its freshness and measured palate also complement creamy risottos, while the citrus notes support grilled white fish, keeping the dish lifted and tidy.
