What kind of wine is it?
Ribera del Duero Albillo Mayor from Dominio del Pidio is a dry white made from Albillo Mayor in the Ribera del Duero region. The wine displays full structure and defined freshness thanks to lees aging and maturation in French oak. Fermentation in concrete preserves its aromatic precision and balances fruit, acidity, and minerality, resulting in a complex and terroir-driven profile.
Where does it come from?
The grapes come from Quintana del Pidio, a plateau in Ribera del Duero with marked temperature swings and limestone soils. The vineyards, some of which are century-old, lie at high altitudes and benefit from a dry continental climate favoring slow ripening and preserving acidity. The limestone enhances the wine’s minerality and tension, while natural ventilation supports sustainable vineyard management.
How is it made?
Harvesting is timed for aromatic maturity to ensure freshness and volume. After pressing, fermentation takes place in concrete tanks that stabilize temperature and maintain purity of aromas. Aging for 6–8 months on the lees in French oak barrels takes place in underground cellars 18 meters deep, so thermal conditions remain constant and regular maturation increases the wine’s complexity.
Tasting notes
The color is straw yellow with golden highlights. On the nose, canned peach and tropical fruit emerge, alongside limestone minerality and light spicy oak notes. On the palate, it is fresh, with lively acidity, full body, and broad texture. The finish is long and persistent, with lingering fruit and a savory close that reflects its origin.
Food pairings
This Albillo Mayor pairs well with white meats and baked fish, as its structure and freshness enhance flavors without overpowering. It is ideal with roast chicken, rabbit, turkey, sea bream or sea bass baked with potatoes and herbs. In Spanish cuisine, it suits dishes like bacalao al horno and pollo al ajillo. It also works with semi-aged cheeses with a delicate taste.
Serving suggestions
Recommended for lunches and dinners where a white with volume and precision is desired, able to accompany structured dishes yet remain easy to drink. Serve chilled between 10 and 12 °C in a large white wine glass to highlight its aromas and oak texture. It can be enjoyed now for its fruity and mineral expression and also has good bottle aging potential over time.
