Doroteo by Pago de Los Capellanes is a red wine from Ribera del Duero made from Tempranillo. It presents a structured and complex style, achieved through lengthy aging in French oak barrels. Natural fermentation in small vats and malolactic fermentation in barriques with periodic bâtonnage contribute to an elegant and powerful profile, a testament to technical expertise and a strong bond with the territory.
Where does it come from
The historic vineyard is located in Pedrosa de Duero, in the heart of Ribera del Duero. The clay-silt soils with a layer of surface gravel, poor in fertility, give structure and concentration. The estate's long-standing history and established viticultural practices enhance an authentic territorial character.
How is it made
The grapes are handpicked and placed in crates, then chilled for 24 hours to preserve freshness. This is followed by a six-day pre-fermentation cold maceration and then spontaneous alcoholic fermentation in small French oak vats. After racking, the wine undergoes malolactic fermentation in barriques with regular bâtonnage, thus extracting complexity and greater volume. The aging continues for 27 months in extra-fine grained French oak barrels, after which the wine rests in the bottle.
Tasting notes
The color is a deep cherry red with ruby highlights. The nose offers ripe berries such as blackberry, cherry, and currant, with balsamic hints of liquorice and accents of thyme and rosemary. The oak brings delicate spices of cinnamon and clove. On the palate, it is fresh, silky, and powerful, with lively and well-polished tannins that support a long persistence and a savory finish.

Doroteo pairs well with impressive red meats such as grilled fillet or oven-baked beef shank, roasted game, or mature and intense cheeses.

Thanks to its structure and the balance between tannins and acidity, Doroteo is enjoyable both young and after a few years of bottle aging.
