Description
What type of wine is it
Psi by Dominio de Pingus is a red wine from Ribera del Duero made from a blend of Tempranillo and Garnacha. It has a fresh, fruity profile with a balanced structure that makes it pleasantly smooth. Fermentation in cement vats preserves the fruit’s integrity, while eighteen months in second-use French oak barrels add complexity without overpowering the freshness. Soft tannins and a harmonious texture complete an accessible profile.
Where does it come from
Psi comes from Ribera del Duero. The over thirty-year-old vines belong to partner winegrowers who tend parcels exposed to a continental climate with significant temperature swings, a key factor in encouraging balanced ripening. The wine tradition in this area supports a profile where acidity and aromatic richness are well balanced.
How is it produced
The Tempranillo and Garnacha grapes are hand-harvested and selected at the winery. After destemming, maceration takes place in cement tanks at a controlled temperature, with gentle punching down to extract aromas and color. Aging continues for eighteen months in second-use French oak barrels. A subsequent period in bottle preserves freshness and varietal character.
Tasting notes
Psi displays a bright ruby color with violet reflections. The nose reveals intense aromas of red fruits such as strawberry, raspberry, and blueberry, accompanied by delicate spicy notes. The palate offers a juicy and fresh texture with soft, well-integrated tannins. The finish is clean, refreshing, with returns of fruit and subtle earthy sensations.
What does it pair with
Thanks to its balanced structure and fruity profile, Psi pairs well with grilled red meats, roasted game, poultry, and aged cheeses.
When to serve it
Psi is enjoyable when young, showcasing vibrancy and freshness, but can also evolve positively over time. Serve at 16-18 °C, opening the bottle at least thirty minutes beforehand to encourage oxygenation and enhance the bouquet.
