The result is a glass with an enveloping sip, characterized by polished tannins and a calibrated integration of the notes imparted by the wood.

Where it comes from

The wine hails from the Ribera del Duero area, with vineyards situated around the winery in the municipality of Pedrosa de Duero. The grapes come from eighty-year-old vines grown on clay-limestone and stony soils, conditions that naturally limit vine vigor and promote remarkable flavor balance. This precious combination of historic vineyards and poor soils sustains a clear territorial expression, yielding a sip of great concentration.

How it is made

A manual harvest in crates is followed by a three-day cold maceration to selectively extract color and aromatic compounds. Alcoholic fermentation takes place in stainless steel with selected native yeasts and punch-downs, for optimal phenolic extraction. Malolactic fermentation occurs spontaneously in barriques, accompanied by periodic bâtonnage to lend greater roundness. The wine then rests for eighteen months in extra-fine-grained French oak barrels, a process that develops a distinct aromatic complexity.

Tasting notes

Visually, it displays an intense cherry-red color with ruby reflections, indicating outstanding color maturity. The nose reveals a rich bouquet centered on ripe black fruits such as blackberry and plum, accompanied by refreshing hints of red currant. Oak aging adds toasted and finely spiced nuances, with clear notes of licorice, cinnamon, and cloves. On the palate, it is deep and silky, with sweet tannins leading into a persistent finish that echoes the olfactory sensations.

Food pairings

The structure of this wine pairs perfectly with meat-based dishes, where the elegant tannin adequately supports long cooking preparations.
