Description
The Tinto Reserva is a red wine of great depth and elegance produced by Pago de los Capellanes in the heart of Ribera del Duero. This wine comes from a selection of the winery's oldest vineyards, expressing the authenticity and nobility of the territory through a seductive and enveloping profile.
The Tempranillo grapes come from vines around 80 years old, cultivated on poor, clay-limestone and stony soils around the Pedrosa de Duero winery. The harvest is carried out manually in crates. After a three-day cold maceration, fermentation takes place in stainless steel at controlled temperatures with selected indigenous yeasts and punchdowns. The malolactic fermentation occurs spontaneously in barrels with periodic bâtonnage. The wine ages for eighteen months in extra-fine-grained French oak barrels.
To the eye, it presents an intense cherry red color with ruby hues. The aromatic bouquet is rich and fragrant, dominated by ripe black fruits like blackberry and plum, and fresh red fruits like red currant. The barrels impart elegant toasted and spicy notes, including licorice, cinnamon, and clove. On the palate, it reveals depth, freshness, and silkiness, with sweet and smooth tannins that offer a velvety and persistent sensation, with a long finish rich in aromatic sensations.
It pairs excellently with important dishes such as roasts, stews, game, meat stews, and aged cheeses.
