Tinto Reserva by Pago de Los Capellanes is a red wine from Ribera del Duero, made exclusively from Tempranillo grapes. It stands out for its structure and complexity, thanks to fermentation in temperature-controlled stainless steel and aging for eighteen months in extra-fine grain French oak barrels. The wine combines freshness and smoothness, with soft tannins and refined aromatic elegance, offering a deep profile with significant aging potential.
Where does it come from
The Tempranillo grapes come from vineyards around Pedrosa de Duero, at the heart of Ribera del Duero. The clay-limestone and stony soils, poor and well-drained, contribute to the wine's structure and marked minerality. The area, with a long winemaking history, is recognized as one of the most prestigious for Spanish red wines.
How is it produced
The grapes are hand-harvested in small crates to preserve the integrity of the bunches. After a three-day cold maceration, fermentation takes place in stainless steel tanks with indigenous yeasts and regular punch-downs. Malolactic fermentation occurs spontaneously in French oak barriques, with periodic bâtonnage. Aging continues for eighteen months in extra-fine grain French oak barrels, imparting aromatic complexity and silky tannins.
Tasting notes
In the glass, the wine displays an intense cherry-red color with ruby highlights. The bouquet is broad, featuring blackberry, ripe plum, and red currant notes, enriched with toasted hints of vanilla, licorice, cinnamon, and a touch of clove. On the palate, it offers structure and freshness, silky tannins, and a sumptuous texture, with a long, persistent finish recalling ripe black fruit and delicate spices.
Food pairings
Tinto Reserva pairs well with important meat dishes such as roasts and braised meats, and also enhances game and stews. It is ideal with aged cheeses. Among traditional dishes, it accompanies braised beef cheek and, in Italy, Barolo-braised beef, highlighting the richness of the sauce and the wine’s intensity.
