Description

Un Sueño en las Alturas is a red wine from Pago de los Capellanes, originating from the highest and most remote territories of the southern Ribera del Duero, in the municipalities of Fuentenebro, Pardilla, and Honrubia. The rugged landscape, red soils, and ancient geology give this wine a distinctive personality, inspired by the founders' dream to best express the purity of the environment, the mineral identity, and the biodiversity of the land.

The Tinto Fino (Tempranillo) grapes come from 50-60-year-old vines grown at altitudes between 900 and 1,200 meters on silica and clay-loam soils. The winemaking involves a cold pre-fermentation maceration, followed by fermentation with indigenous yeasts in temperature-controlled stainless steel. The malolactic fermentation occurs spontaneously at low temperatures in large French oak barrels, where the wine is aged for a year on its lees with periodic bâtonnage. It is bottled without fining or stabilizations.

It presents a bright cherry-red color. On the nose, it reveals a harmonious balance of clean, intense aromas of black and red fruits with hints of undergrowth, balsamic notes, and Mediterranean scrub. The wood imparts delicate spicy nuances. On the palate, it is vibrant and airy, with lively and smooth tannins, great freshness, and silky finesse, closing with a long, mineral finish that highlights the elegance of high altitudes.
