Description
The Sangiovese Appassimento Uve Portate a Cesena by Leonardo da Vinci is a structured and enveloping red wine made from Sangiovese grapes grown in the hilly areas of Castrocaro Terme, Predappio, and Bertinoro. The vineyards, located between 250 and 350 meters above sea level, face south and southeast, resting on clay and marl-sandstone soils.
The production process involves controlled drying of the grapes, monitoring temperature, humidity, ventilation, and weight loss. This is followed by fermentation at a controlled temperature of 26°C with the inoculation of selected yeasts. Aging takes place in French and American oak barrels for a period of 10-12 months, giving the wine more complexity and smoothness.
The wine shows a deep ruby red color with a malva hue. The nose offers intense sensations of ripe fruit that evolve into sweet vanilla and end with elegant spicy and tobacco notes. On the palate, the pronounced acidity harmonizes with soft tannins, enhancing the fruit and providing a long-lasting finish.
Perfect with grilled meat and roasted potatoes.
