How it is produced
The Sangiovese grapes are hand-harvested between late August and late September, with careful bunch selection. After destemming, fermentation occurs in stainless steel at a controlled temperature, then the wine macerates on its skins for up to fifteen days. Malolactic fermentation and ageing take place in large Slavonian oak casks for at least six months, allowing the tannins to integrate and the aromatic complexity to develop harmoniously.
