Description
The Saint-Aubin Premier Cru En Remilly by Joseph Colin is a French white wine produced in the Burgundy region. Made from Chardonnay grapes cultivated using sustainable practices, it comes from a vineyard located about 70 meters from Montrachet, with vines over 35 years old on calcareous and rocky soils.
The winemaking process involves fermentation with indigenous yeasts and aging in used oak barrels, two-thirds of which are 500 liters and one-third are 228 liters. The wine undergoes no clarifications or filtrations, preserving the expressive purity of the terroir.
The nose reveals notes of pear, green apple, white flowers, and pastry, with a hint of reduction. On the palate, the wine is medium-bodied, with a silky texture and lively acidity, leading to a mineral and persistent finish.
It pairs perfectly with dishes based on fish, shellfish, or white meats.
