Description
Château Cheval Blanc was born in vineyards located in the renowned production area of Saint-Émilion, on the border with the Pomerol plateau. Already from the first harvests, this wine was a huge success, obtaining gold medals in the International Exhibitions of London and Paris, respectively in 1862 and 1867, represented on its label even today. In 1955 he was classified Premier Grand Cru Classé "A" for his quality, becoming a legend in the history of wine.
It is obtained from Cabernet Franc and Merlot grapes, harvested at different levels of maturity, from different parcels and from various terroirs, in order to develop an unparalleled complexity and variety of aromas. Fermentation takes place in stainless steel at controlled temperature, separate for the different parcels. After malolactic fermentation, the wine ages for 18 months in new French oak barrels, before being bottled.
Cheval Blanc is characterized by an intense ruby red color. The nose opens with a particularly rich and varied bouquet, with aromas of raspberry, blackberry and black currant, enriched with delicate shades of pink and violet that intertwine with pleasant spicy hints of licorice and incense, leaving room for fresh balsamic notes of mint and eucalyptus. On the palate it is powerful, elegant and tannic, with an incredibly velvety structure that accompanies a finish of excellent persistence.
The complexity of this wine goes well with elaborate and refined preparations based on beef and game. Ideal in combination with lamb.
