Description
Jean-Baptiste Souillard's Saint-Joseph is a French red wine produced in the Northern Rhône region, made from Syrah grapes grown using sustainable practices. The vines, planted in the early 1970s and 2000s, are located in three plots situated in the municipalities of Sarras, Andance, and Saint-Pierre de Boeuf, at an altitude between 250 and 300 meters on east-facing granitic soils.
The winemaking involves spontaneous fermentation with indigenous yeasts and a maceration of 2-3 weeks with remontage, using 60% to 100% whole clusters. The wine is aged in used oak barrels for a period of 13-18 months, without fining or filtration, with a minimal and measured use of sulfites.
On the nose, there are notes of black fruits, black pepper, and violet. On the palate, the wine is structured and elegant, with fine tannins and a vibrant freshness that accompanies a long and mineral finish.
It pairs perfectly with red meat dishes, game, or aged cheeses.
