Capofaro by Tasca d’Almerita is a white wine made exclusively from Malvasia, grown on the Aeolian island of Salina. Vinification takes place in stainless steel at a controlled temperature, and subsequent ageing in the same material aims to deliver a precise and well-defined aromatic profile. The style is intense and aromatic, with sweetness and acidity in balance, a clearly perceptible freshness and a long, citrusy finish, for a precise and immediate drinkability.

Where it comes from

This wine is produced in the vineyards of Tenuta Capofaro, in the heart of the island of Salina in the Aeolian Islands. Its island origin and connection to a marine and Mediterranean setting define a distinctive identity, highlighted by aromatic intensity and the freshness that complements its sweetness. The Salina origin enhances the work in the vineyard and a cellar approach focused on expressive clarity.

How it is produced

The Malvasia grapes are harvested and selected by hand, with care taken to maintain the integrity of the bunch. Fermentation takes place in stainless steel at a controlled temperature for 25 days, ensuring precise process control and aromatic accuracy. After fermentation, the wine is aged for 6 months in the same tanks before bottling, maintaining a clean style focused on fruit character.

Tasting notes

It appears deep yellow with gold highlights. The nose offers an intense and aromatic bouquet, with fruity aromas of apricots and dried grapes, followed by spicy notes of black pepper and a hint of lemongrass. The palate shows well-balanced sweetness and acidity, a pleasantly fresh sensation, and a long persistence, with recurring citrus notes on the finish.
