Description
This red Sancerre from Domaine Delaporte is made exclusively from Pinot Noir grapes grown in Chavignol, in the Loire region. The vines, some of which are over forty years old, sink their roots into the limestone soils known as "caillottes", contributing to the wine's elegance and purity. The farming is characterized by an environmentally friendly approach, with no use of herbicides, insecticides, or chemical fertilizers.
The harvest is carried out by hand with a rigorous selection in the cellar. After complete destemming, the grapes undergo a maceration of about 25 days with daily pump-overs to keep the cap moist, without punching down. Malolactic fermentation occurs spontaneously in oak barrels for half of the wine and in truncated wooden vats for the other half. Maturation continues for a period varying between 8 and 12 months, with no fining or filtration before bottling.
In the glass it shows a deep ruby hue with violet highlights. The nose is filled with intense aromas of ripe red fruits such as cherry, raspberry, and blackberry, enriched by toasted hints, smoky notes, sweet spices, and a touch of graphite. The palate is enveloping, with dense yet well-integrated tannins, and a persistent, savory, and inviting finish.
Perfect paired with roasted white meats or freshly sliced cold cuts.
