Description
The Sannio Taburno Coda di Volpe of Fattoria la Rivolta, located in Torrecuso in the province of Benevento, comes from vineyards belonging to the Doc Taburno or Sannio, in Campania.
It is produced exclusively from organic Coda di Volpe grapes, which have the characteristic of assuming the shape of the foxtail when fully ripe. The harvest is done manually in early October. Subsequently the wine ages in stainless steel tanks, at a controlled temperature of 14 - 17 ° C, for 15 days.
This Sannio Taburno Coda di Volpe is characterized by a light straw gold color. The nose opens with a fruity bouquet, enriched with spicy aromas. On the palate it is pleasantly acidic and saline.
Perfect to combine with soups and pasta dishes, it is ideal if accompanied with aged cheeses and baked fish.
