Description

The Bulles de Roche of the Domaine des Roches Neuves was born and grew in Saumur, in the Loire.

It consists of a very particular blend of Chenin Blanc, 95% present, and Cabernet Franc, 5%. Fruit of a method of biodynamic agriculture, the grapes are harvested by hand and vinified with the utmost respect for the quality and healthiness of the raw material. The base wine, which will then be sent for refermentation in the bottle, previously carries out a passage in wood. The stop on the lees at the end of the second fermentation is about 18 months.

At sight it proudly shows its intense yellow color, almost golden. The scent recalls the citrus notes of grapefruit and lemon, on a pleasantly floral background of wildflowers and aromatic herbs. In the mouth it is savory and fresh, elegant and fruity in the sip. It closes with a stretch of finesse that distinguishes Chenin Blanc.
