What kind of wine is it
Sensoinverso Syrah by Abbazia Santa Anastasia is a red wine made from Syrah grown using certified biodynamic practices (Demeter) in Sicily. It is vinified in concrete vats at controlled temperature with a long maceration on the skins, without the addition of selected yeasts, enzymes or clarifiers. Maturation in oak barrels and subsequently in bottle defines a structured and elegant style, with a velvety tannic texture and a clearly perceptible spiciness.
Where does it come from
The grapes come from vineyards located in Castelbuono, Sicily, at an altitude of 350 meters. This origin contributes to a fresher and more orderly profile, with a well-defined aromatic expression. In this context, the grape variety offers a harmonious integration between fruit and spice, maintaining balance and precision.
How is it made
Vinification takes place in concrete tanks with fermentation at a controlled temperature between 25 and 28°C, without the use of selected yeasts, enzymes or clarifiers. Maceration on the skins lasts 30 days and the wine is unfiltered, with an almost negligible presence of sulfur. This is followed by 24 months' maturation in oak barrels and a further 12 months in the bottle, to progressively integrate structure and boisée notes.
Tasting notes
In the glass it shows a purplish red color with violet reflections. The nose is fresh and balsamic, with notes of red fruit and a clear spiciness of black and white pepper, followed by cinnamon and nutmeg, and a light hint of boisée. On the palate it is elegant and velvety, with sweet tannins supporting the fruit and a long, invigorating persistence.
What does it pair with
At table it naturally pairs with red meat, game, risottos, and aged cheeses. The structure and spiciness make it suitable for intense preparations, while the velvety texture keeps each sip pleasant even with richer dishes. It is a reliable match when you are looking for balance and gustatory continuity.
