Soave Classico Fittà Peaks & Valleys by Villa Della Torre is a still white wine made from Garganega grapes in the historic Soave area. The winemaking approach focuses on freshness, sapidity, and balanced structure, highlighting the minerality of volcanic soils. Fermentation exclusively in steel tanks preserves the varietal purity and clearly showcases its connection to the territory.
Where it comes from
The grapes are sourced from vineyards in the Fittà hamlet, in the heart of the eastern Veronese hills, at about 255 meters above sea level. The soils, rich in black basalts and volcanic materials, contribute a distinct minerality and excellent drainage. The hilly climate with pronounced diurnal temperature variation promotes even ripening and preserves acidity and freshness, distinctive features of this subzone.
How it is produced
Garganega grapes are harvested whole and with well-preserved acidity to maintain the wine's freshness. After a gentle pressing, fermentation takes place in steel at controlled temperatures, with limited oxidation and preservation of varietal aromas. The wine rests in steel on fine lees for six months, gaining volume and stability, then undergoes a brief bottle aging that enhances the saline component and harmonizes structure and acidity.
Tasting notes
Bright yellow with straw reflections in the glass. The nose is precise, with notes of white peach, wildflowers, and a mineral hint reminiscent of wet stone. The palate is full and savory, showing a round texture and a taut progression supported by defined acidity. The finish is long and harmonious, consistent with the volcanic origin of the land.
Food pairings
This Soave Classico pairs effortlessly with seafood crudo, fish carpaccio, and delicate dishes where the wine's sapidity enhances the freshness of the ingredients. Excellent with vegetable-based starters, spring risottos, and pasta with zucchini or asparagus. Its aromatic clarity also suits light Asian cuisine such as sushi, sashimi, or clear broth ramen. Among regional dishes, it pairs well with baccalà alla vicentina.
When to serve it
Best served chilled, between 10 and 12 °C, in medium-sized glasses to bring out its mineral and fruity components. Perfect from aperitif to a full meal in temperate and warm seasons, but with enough structure for winter dishes based on fish or vegetables. Immediately enjoyable for its clarity, and the good acidity together with sapidity allow for cellaring for several years, maintaining balance and depth.
