Vino Spumante di Qualità Brut Nature Metodo Classico L'Eccezione La Regola

The Vino Spumante Brut Nature L'Eccezione de La Regola originates from vineyards on the Tuscan coast, located in the valley of the Cecina river, about 5 kilometres from the sea, in the municipality of Riparbella. All processes are organic following the conversion process.

It is made from Gros Manseng grapes and a small percentage of Chardonnay grapes. The harvest is manual with careful selection of the grapes in the vineyard. Fermentation takes place in stainless steel vats at a temperature of 18 °C. The second fermentation takes place in bottle according to the Metodo Classico, with ageing on the lees for 36 months.

The colour is straw yellow, crossed by a minute and persistent perlage. The bouquet recalls toasted aromas and yellow pulp fruit, on a background of acacia. The sip is fresh and smooth, with a beautiful harmony.

Recommended to be served as an aperitif or as an accompaniment to appetizers, oysters and shellfish.
