Description
Scaia Brut Blanc de Blancs is a sparkling wine from Tenuta Sant’Antonio produced in the municipalities of Colognola ai Colli, Illasi, and Mezzane, in the province of Verona. The vineyards are located about 100 meters above sea level, on medium-textured soils with gravel in the subsoil. The varieties used are Garganega and Chardonnay, with 10-15 year-old plants grown in Guyot and Pergola training systems.
The winemaking process involves destemming the grape clusters with a short cold maceration, followed by gentle pressing and fermentation at low temperatures. Malolactic fermentation does not take place. The base wine undergoes weekly batonnage and is then made sparkling according to the Martinotti method in stainless steel autoclaves, where the final aging also occurs before bottling.
In appearance, it displays a brilliant straw yellow color with greenish reflections and a fine, persistent perlage. The aroma is fresh and lively, with floral notes of acacia and jasmine, accompanied by citrus hints of pink grapefruit, orange, and lemon. Exotic nuances of pineapple, mango, and banana also emerge on a delicately fragrant background. On the palate, it is taut and vibrant, with good freshness and sapidity, balanced and refreshing, with a fruity finish that recalls citrus and tropical fruit.
Perfect as an aperitif, it is best enjoyed with seafood or vegetable starters, carpaccio, raw seafood, tartare, and cold dishes.
