Description
The Caracal is a red wine produced in South Africa by the Neethlingshof winery with a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec, grown among the hills of Stellenbosch. It is part of the Short Story Collection and represents the finest expression of the Bordeaux style reinterpreted in the context of the Western Cape.
After being harvested between late February and mid-March, the grapes are destemmed and fermented in steel roto-fermenters with selected yeasts at a controlled temperature between 25°C and 27°C. Following malolactic fermentation, the wines mature separately in new and second and third passage French barriques for 14 months before the final blending.
It presents with an intense ruby red color. The nose releases aromas of black cherry, plum, red apple, white pepper, cigar box, and leather. The sip is full and dry, with notes of blackberry, mulberry, and black cherry in spirit, well-structured tannins, and a persistent finish with spicy and smoky hints.
Perfect with braised meats, game, aged cheeses, or savory vegetable pies.
