Description
The Brut Natural Chardonnay by Villiera is a South African Méthode Cap Classique sparkling wine made exclusively from Chardonnay grapes grown in the estate's ecological vineyards in Stellenbosch. This Blanc de Blancs was one of the first examples of Cap Classique without dosage made in South Africa, and it is aimed at an audience attentive to sustainability and the pure expressive nature of wine.
After manual harvesting, the slightly unripe grapes are whole-bunch pressed. The selected cuvée undergoes natural alcoholic and malolactic fermentation, then ages for six months on the primary lees without additives. The secondary fermentation occurs in the bottle, followed by a long three-year aging on the lees to develop structure and complexity, without adding sugars (zero dosage) or sulfites.
On the nose, intense notes of yeast and bread crust are detected, while on the palate it is full and toasty, with a dry finish and an elegant savory aftertaste. The creamy structure and well-integrated minerality make it a refined and gastronomic classic method.
Ideal with oysters, fish carpaccios, or lightly aged fresh cheeses.
