Castelfeder's Pinot Grigio 15 is a white wine from Alto Adige made from Pinot Grigio grapes. It displays a fresh and elegant profile, with a balanced structure and a clean finish. Fermentation in stainless steel and aging on the lees give it volume and aromatic precision, making the wine suitable for immediate consumption or a brief cellaring period.
Where does it come from?
The grapes come from the Bassa Atesina , in the southern part of Alto Adige, where temperature variations and valley currents favor clean aromas and stable acidity . Vineyard "15" enjoys the protection of the surrounding mountains, which regulate an ideal microclimate for even ripening. Varying soils and altitudes produce a Pinot Grigio with a balanced and taut character.
How it is produced
Hand-picked grapes select only the finest bunches, ensuring integrity and optimal ripeness. After destemming, the grapes are gently pressed to obtain a clean must. Fermentation takes place in temperature-controlled steel tanks, followed by six months of aging on the lees, enhancing the body and complexity of the flavors .
Tasting notes
The color is a bright straw yellow . The nose reveals intense aromas of pear and ripe apple , with a light citrus note. On the palate, it offers a full and harmonious entry, with a smooth and consistent texture thanks to the work on the yeasts. The finish is savory and supported by a lively freshness that prolongs the drink.
What does it pair with?
It pairs easily with appetizers and light first courses, especially those with aromatic herbs or delicate spices. It's also ideal with white meats and typical South Tyrolean dishes such as speck platters, semi-hard cheeses, or mountain herb risotto. Excellent with speck dumplings, where the wine's freshness balances the dish's savory flavor.
When to serve it
Recommended as an aperitif or during informal dinners, it also pairs well with more structured dishes, as long as they aren't too fatty or spicy. Serve chilled, between 10 and 12°C , in a medium-sized white wine glass to enhance its aromas and roundness.
