Description
Calafiori is a Pecorino Terre d’Abruzzo from Cantina Truentum, originating from the Colli Aprutini area, where this native grape expresses an authentic and territorial profile, characterized by natural freshness and a sunny elegance typical of the Abruzzo region.
The vinification process involves crushing and destemming of the grapes, followed by cryomaceration and gentle pressing of the must, with fermentation at controlled temperature and aging on the lees, completed by a period of rest in stainless steel tanks to preserve aromatic integrity and flavor precision.
On the nose, it stands out for a fruity and floral expression, with notes of citrus and tropical fruit intertwined with hints of white peach, mango, and sage, while on the palate, it is fresh and full, with good structure, long persistence, and a slightly balsamic finish.
It pairs naturally with fish dishes, delicate first courses, white meats, and cheeses.
