The Pecorino Terre d'Abruzzo Biologico from Cantina Tollo is a white wine made from Pecorino grapes grown according to organic farming principles in the province of Chieti, in Abruzzo. This wine is part of the cantina's "Organic" line, which enhances native varieties through sustainable and environmentally respectful practices.
The winemaking process involves destemming and crushing of the grapes, followed by cryomaceration and gentle pressing of the must. Fermentation occurs at a controlled temperature in stainless steel tanks, ensuring the preservation of the primary aromas of the grape variety. Refinement continues in steel, maintaining the freshness and integrity of the wine.
In appearance, it shows a light straw-yellow color with greenish reflections. On the nose, it offers fruity scents of citrus, tropical fruit, and peach, accompanied by elegant floral notes. On the palate, it is full, structured, and has a long persistence, with a slightly balsamic finish that enhances its overall harmony.
Ideal paired with raw fish, shellfish, fish dishes in general, and fresh or stretched-curd cheeses.
