Description
Produced in the province of Chieti, Pecorino by Cantina Tollo is a white wine that celebrates the rediscovery of an ancient Abruzzese grape variety, historically mentioned as early as the 16th century. This wine comes from Pecorino grapes, carefully cultivated in an area that has managed to enhance the strength and resilience of a nearly forgotten variety. It is the result of the meeting between tradition and oenological expertise, aimed at expressing freshness, structure, and versatility.
The winemaking process involves crushing and destemming followed by cryomaceration and gentle pressing. The must ferments at a controlled temperature in stainless steel tanks, where it subsequently refines on its own lees. This process allows for the aromatic component to remain intact, imparting complexity and taste persistence to the wine, while best enhancing the varietal characteristics of the grape.
In the glass, it presents a light straw yellow color, enriched by greenish reflections. The bouquet is fresh and fruity, with notes of peach, citrus, and tropical hints, complemented by scents of aromatic herbs and elegant flowers. On the palate, it is full and well-structured, with a long persistence and a balanced acidity that enhances its liveliness, making it harmonious and enjoyable.
It is the ideal companion for raw fish, shellfish, and fish dishes, but it also pairs perfectly with fresh or stretched curd cheeses.
