Description
Caiarossa Bianco is an elegant Tuscan wine born from the meeting of international varieties and the expressiveness of the territory. Created from a careful selection of Viognier, Chardonnay, and Vermentino grapes cultivated using biodynamic methods, this white embodies harmony between nature and technique, aiming to best express the complexity and purity of the Riparbella terroir.
After the harvest, strictly done by hand, the clusters are cooled and gently pressed. The Chardonnay ferments in French oak barrels, while Viognier and Vermentino ferment in amphoras and concrete vats, with aging on fine lees for about 8 months. The use of different containers enhances structure and freshness, without malolactic fermentation to preserve the aromatic expression.
The nose reveals refined aromas of white flowers, ripe fruit, and light citrus notes, enriched by mineral hints and a touch of spice. On the palate, it stands out for its lively freshness, enveloped by a pleasant softness and a sapid persistence that invites the next sip.
Perfect when paired with dishes based on fish, shellfish, or fresh cheeses.
