What kind of wine is it
Toscana Haiku by Castello di Ama is a red wine produced in the heart of Tuscany from Sangiovese, Merlot, and Cabernet Franc. This blend delivers a harmonious and complex profile, with a medium structure that combines freshness and balance. Vinification involves fermentation in stainless steel at controlled temperature and twelve months maturation in barrique. The resulting wine offers versatility and is suitable for various occasions.
Where it comes from
The grapes are sourced from the Montebuoni vineyard, located between Gaiole and Radda in Chianti, in an area historically renowned for red wine production.
How it is produced
Manual harvesting in crates ensures the integrity of the grapes. After gentle crushing, fermentation takes place in stainless steel at 30-32 °C for about 25 days. Twelve months of ageing in barrique enhances the aromatic complexity.
Tasting notes
In the glass it displays an intense ruby red colour with violet reflections. The bouquet offers notes of ripe berries, cherry, and raspberry, with spicy hints of vanilla and black pepper. On the palate, freshness is balanced by well-integrated tannins, the body is medium, and the finish is harmonious with a pleasantly fruity persistence.
Food pairing
This wine pairs well with grilled red meats such as Florentine steak and roast beef, as well as mushroom-based dishes like sautéed porcini. It is also excellent with pappardelle with wild boar, pasta with meat ragù, baked lasagna, and mature cheeses such as Tuscan pecorino. It also works well with mushroom risotto and typical Tuscan cured meats.
When to serve it
Thanks to its structure and barrique ageing, the wine expresses its best fruity and spicy notes in the early years after bottling and can evolve over time. It is advisable to uncork the bottle at least thirty minutes before serving and to serve at 18-20 °C to highlight its characteristics.
