What kind of wine is it?
Onirico by Prima Domus is a Tuscan red wine made from Sangiovese grapes and a small portion of Ciliegiolo. It stands out for its freshness and immediacy, thanks to a vinification process that favors drinkability and easy pairing. Its profile is sleek, with well-balanced tannins and good acidity, designed to accompany everyday meals and informal moments.
Where does it come from?
The grapes come from vineyards in Castelnuovo Berardenga, in the southern part of the Chianti area. This territory is known for producing wines with a fresh and fruity character, featuring an essential structure and natural vibrancy.
How is it produced?
The grapes are harvested by hand in the second week of September, with careful selection of ripeness. Fermentation takes place in stainless steel at a controlled temperature, with a skin maceration of about ten days. Aging continues in steel before bottling.
Tasting notes
It shows a lively ruby red color, typical of young Sangiovese. The nose reveals scents of cherry, blood orange, and small red fruits, with floral notes of violet and dog rose. The palate is fresh and smooth, with integrated acidity, crisp tannins, and an agile structure. The finish is harmonious, of medium persistence, with fruity returns and a slight savory hint.
Food pairings
This wine easily pairs with Tuscan appetizers like crostini with chicken liver or cured meats and goes well with tasty Mediterranean first courses thanks to its acidity and dry tannins. It matches roast white meats, meatballs in sauce, and grilled vegetables without overpowering the flavors. It's also excellent with pici pasta topped with cinta senese ragù or with simple pasta with tomato and basil, as well as with medium-aged Tuscan pecorino cheese.
When to serve it
Onirico suits informal lunches and dinners or an evening with friends focused on freshness and easy drinking. Serve it slightly chilled, around 16-18 °C, in a medium-sized glass to highlight the fruit and floral components. It doesn’t require long aeration: a short opening will immediately release its aromas. It is meant for young consumption and will keep well for a few years if properly stored.
