Description
What kind of wine it is
Toscana Vermentino di Viticcio is a white wine made exclusively from Vermentino grapes. Vinification occurs in stainless steel without malolactic fermentation, a technical choice aimed at preserving the varietal freshness and aromatic clarity. Thanks to ageing on the lees, the wine develops a full structure yet remains smooth, maintaining an elegant and distinctly savory style.
Where it comes from
This white wine is born in the Pignatelli Magliano area, where the vineyards benefit from the maritime influence due to their closeness to the sea. The vines grow at 200 meters above sea level on sandy and silty soils rich in sandstone, a terroir that gives the wine a dry textural profile. The agricultural management follows certified organic methods, respecting the ecosystem and ensuring balanced ripening thanks to the southern and southwestern exposures.
How it is produced
The production process includes fermentation in stainless steel tanks at low temperatures, around 13°C, to protect the fruity aroma. No malolactic fermentation is performed, allowing the wine to retain vibrant acidity. This is followed by four months of lees ageing, which enriches the mouthfeel with roundness, ending with cold stabilization to maintain the wine’s aromatic purity.
Tasting notes
In the glass, you can observe a bright straw yellow color enriched by greenish reflections. The nose evokes a sea breeze, joined by floral notes of acacia and hawthorn, with fruit hints of pear and pineapple interwoven with nuances of sage. The palate is full and savory, marked by a mineral edge and a persistent, slightly bitter finish.
Food pairings
Its pronounced savoriness makes this Vermentino ideal with raw seafood, shellfish, and grilled fish, where the wine’s freshness balances the sweetness of the flesh. It also pairs beautifully with vegetarian dishes enhanced with aromatic herbs that echo the sage notes. Regionally, it is perfect with cacciucco or spaghetti with clams, as it supports intense flavors without overwhelming the delicacy of the main ingredient.
When to serve it
This white is the ideal choice for informal occasions or seafood lunches that call for a precise and refreshing sip. To fully appreciate its aromatic definition and lively palate, it is recommended to serve it well chilled to enhance the wine’s crisp components. This label is intended to be enjoyed young, when the fruit’s fragrance and gustatory energy express themselves most immediately.
