Dealcoholization occurs through vacuum distillation on evaporation columns, allowing selective removal of ethanol. The original aromas are then reintegrated into the dealcoholized wine, resulting in a product with an alcohol content of 0.0%, maintaining the organoleptic characteristics of the original wine.
