Description

What kind of wine it is

Blasé by Revì is a Dosage Zero sparkling wine produced in Trentino, the result of a harmonious blend of Chardonnay and Pinot Nero. Belonging to the Trento denomination, it is characterized by a dry, fresh, and structured profile. The winemaking process follows the Traditional Method with bottle refermentation, completed by extended aging on the lees. This meticulous process gives the style remarkable precision and combines fresh sapidity with an enveloping texture, delivering a taut, clean drink that highlights measured, evolving nuances.

Where it comes from

This wine is born in Trentino, an authentic expression of the Trento denomination. The identity of Blasé is deeply linked to the mountainous terroir, capable of offering clear freshness and very precise aromatic definition. The choice of a traditional blend of Chardonnay and Pinot Nero aligns perfectly with the Traditional Method. The geographical origins steer its profile toward a dynamic palate, enhanced by careful craftsmanship and long maturation times that shape its austere and linear character.

How it is produced

Vinification begins with a gentle pressing, after which the must is separated from stems and skins, clarified, and started on fermentation at a controlled temperature. The secondary fermentation takes place by refermentation in the bottle, faithfully respecting the Traditional Method. The wine rests on the lees for forty-two months, a crucial stage that enriches the finesse of the sip and its aromatic complexity. After disgorgement, it undergoes a further cellar aging of twenty-four months strictly without the addition of sugar, to preserve a dry and linear expression.

Tasting notes

It shows a straw yellow color decorated by intense golden highlights and a fine, persistent perlage. The nose reveals a complex and clear aromatic spectrum, where varietal and territorial notes blend with dried wildflowers, delicate toasted nuances, and ripe fruit. On the palate it is perfectly balanced and offers a fresh sapidity supported by a soft structure. This broadness masterfully balances the pronounced dryness of Dosaggio Zero, delivering a long, clean, and consistent finish.

Food pairings

Perfect enjoyed on its own, this sparkling wine reveals its full potential alongside refined fish dishes and seafood. Its saline nature and solid structure make it ideal for enhancing raw seafood, light appetizers, and fresh cheeses, ensuring a well-prepared palate thanks to its distinct dry character. Locally, it pairs excellently with trout, while a classic pairing is with spaghetti alle vongole, a combination that creates a wonderful synergy based on a shared savory character.

When to serve it

Blasé is the perfect choice for curated aperitifs and elegant tables, as it lends itself beautifully when a rigorous yet smooth style is desired. Thanks to the prolonged period on the lees, it expresses remarkable aromatic richness right from the start, while maintaining well-integrated freshness. It also offers great aging potential for those who wish to cellar it further. It is an excellent Traditional Method wine, ideal to accompany the entire meal with consistency during convivial occasions.
