Trento DOC Paladino Extra Brut Millesimato 2010 Revì

The Paladino Extra Brut Millesimato Dosaggio Zero represents the Cru of the Trentino excellence Revì.

Obtained exclusively from Chardonnay grapes, organically grown and harvested in mid-September, this sparkling wine undergoes a soft pressing, followed by the fermentation phase. Following the tradition of the Classic Method, the refermentation takes place in the bottle and the permanence on the yeasts is a good five months.

Paladino di Revì is characterized by an intense straw yellow color, with a fine and persistent perlage. The nose offers intimate fruity sensations, which blend well first with floral notes and, later, with a growing mineral scent reminiscent of the rocks of the Trentino mountains. In the taste it is enveloping and silky, with pleasant sensations of citrus fruit and a good flavor. The freshness is enchanting.

Perfect with fish and shellfish dishes, it also goes well with very elegant and formal aperitifs.
