Trento Rosé Brut from Borgo dei Posseri is a sparkling wine made using the Traditional Method from Pinot Nero grapes grown in Trentino. This rosé Brut presents a fresh and elegant profile, with a defined structure and a fine bubble. The brief maceration on the skins and the long aging on the lees give aromatic complexity without losing lively acidity and precision. Fermentation and maturation in steel preserve the varietal fragrance and the typical minerality of mountain vineyards.
Where it comes from
The grapes come from mountain vineyards between 520 and 720 meters above sea level in Trentino. The temperature range between day and night preserves the acidity and aromatic integrity of Pinot Nero. Alpine soils and constant ventilation favor a slow ripening, steering the wine towards a taut and savory profile. In this area, the Traditional Method has a long history, thanks to climatic conditions suited for precise and stable base wines ideal for extended lees aging.
How it is produced
The Pinot Nero grapes are harvested to create bases with high natural acidity and gustatory balance. After pressing, a short maceration on the skins extracts the rosé color and a subtle phenolic component. Fermentation and aging in stainless steel for about 8 months preserve freshness and aromatic precision. The secondary fermentation in bottle according to the Traditional Method, with 24 months on the lees, contributes to the wine's complexity, creaminess, and finesse of the perlage. Disgorgement defines the Brut style and the cleanliness of the sip.
Tasting notes
In the glass it shows a pale and brilliant pink, accompanied by a fine and continuous perlage. The nose reveals small red fruits and citrus notes, with marked freshness and hints of yeast and bread crust typical of bottle refermentation. On the palate it is full and enveloping, with lively acidity extending the sip and maintaining balance and drinkability. A persistent and mineral finish recalls its mountain origin and the prolonged aging on the lees.
Food pairings
It pairs well with light appetizers, fish tartare and shellfish, as well as first courses based on vegetables or seafood, where acidity and dryness cleanse the palate. Excellent with fried fish and vegetables, as its fine bubbles and savoriness enhance the crunchiness. For a local twist, it accompanies herb dumplings with light melted butter or potato "tortel" with fresh cheese.
