Description
The Organic Tullum Pecorino comes from vineyards grown organically, located on the hills of Tollo, in the heart of the DOP Tullum.
It is produced from 100% Pecorino grapes, harvested manually in the first ten days of September. Fermentation takes place spontaneously with maceration on the skins. It follows aging for 6 months on its lees in steel and cement tanks, before the subsequent bottling which does not require any filtration.
Intense straw yellow in the glass, it opens to the nose with delicious floral and fruity notes, with an intense mineral trace in the background. The palate is characterized by a good body and minerality, with light hints of fresh almond, vegetables and balsamic which alternate harmoniously during the tasting.
Ideal in combination with all dishes of vegetarian cuisine or with fish, it must be absolutely tried in association with a risotto with seafood.
