Description

The Godello O Luar do Sil Sobre Lías produced by Pago de los Capellanes is a white wine born from small plots of old vines located in the Valdeorras region. The soils, composed of "xabre" - sand derived from the disintegration of granite - impart a strong mineral identity to the wine. The oenological project aims to exalt the purity of the territory, enhancing the Godello variety through meticulous and environmentally respectful work.

The harvest is carried out manually with selection on a table, followed by de-stemming and soft pressing. After a pre-fermentation maceration at cold temperatures for 4-6 hours, fermentation takes place in stainless steel tanks between 16 and 18°C. The wine is then kept on the fine lees for six months, with weekly bâtonnage, in order to increase structure and complexity without losing aromatic freshness. The aging aims to achieve a balance between fruit, minerality, and volume on the palate.

To the eye, it presents a straw yellow color with greenish reflections, bright. On the nose, it reveals intense varietal aromas of ripe peach, pastry notes due to the rest on the yeasts, and balsamic and floral accents that evoke the native vegetation, such as broom, heather, and gorse. The sip is broad and fresh, with evident minerality, delicate herbal sensations, and a persistent, juicy, and aromatic finish.

Excellent with fish dishes, seafood, herb risottos, or fresh cheeses with a creamy profile.
