The Valdobbiadene Brut Coste di Levante by Col Vetoraz is a refined Prosecco made from Glera grapes grown in east-facing vineyards located in the hills of Valdobbiadene. This wine expresses the elegance and balance typical of the denomination, thanks to the selection of the best grapes and care taken in every stage of production.
The winemaking process involves soft pressing followed by fermentation at controlled temperatures, with subsequent re-fermentation according to the Charmat Method in large pressurized tanks. The aging takes place for a period of 30 to 40 days, ensuring a clean aromatic profile and a creamy texture.
It is characterized by a fine and persistent perlage and an elegant bouquet that recalls floral notes of rose, acacia, and citrus, with fruity hints of white peach, pear, and apple. On the palate, it is dry and savory, with a pleasant freshness and harmonious structure.
Perfect as an aperitif, it pairs ideally with shellfish and fine fish, enhancing flavors with its lively minerality.
