Description

“Col de Mez” Extra Dry is a Valdobbiadene Superiore di Cartizze produced in the historic Cartizze area by Soligo. Made from Glera grapes grown in vineyards located in a particularly suitable area, it expresses the elegance and sumptuousness typical of a unique terroir, where the balance between plant, soil, and microclimate results in a sparkling wine of great prestige and refinement.

The grapes are harvested by hand and gently pressed in the winery. Fermentation takes place slowly in stainless steel tanks with the use of selected yeasts, to preserve the aromatic purity of the fruit. The secondary fermentation occurs in an autoclave following the Martinotti method, ensuring freshness, fragrance, and a refined perlage.

It has a bright straw yellow color with greenish reflections and a fine, persistent perlage. The bouquet is elegant and delicately fruity, with hints of pear, peach, and citron, enriched by floral notes of broom and hawthorn, and pleasant mineral nuances. On the palate, it is creamy and well-balanced, with a pleasant softness leading to a persistent and slightly citrusy finish.

Perfect as a refined aperitif, it pairs elegantly with fish-based first courses, tartare, and delicate preparations, enhancing their freshness and finesse.
