Where it comes from
This wine comes from the Monte Lencisa vineyard at 410 meters above sea level on the Veronese hills of classic Valpolicella. The breezy hillside environment promotes gradual ripening and preserves acidity, while the pink limestone soil imparts a taut palate and a saline finish. The area, marked by temperature fluctuations and a mosaic of exposures, has always produced elegant and fresh reds.
How it is made
The Corvina, Corvinone, and Rondinella grapes arrive at the winery and undergo fermentation with skin maceration to extract color and tannins in a controlled manner. Fermentation takes place in cement vats, which offer thermal stability and micro-oxygenation without aromatic interference. The wine rests in cement for six months and then spends two months in bottle, thus fruit purity, integrity, and varietal identity remain well-present.
Tasting notes
In the glass, it shows a brilliant ruby red color with good transparency. The nose reveals scents of crisp cherry, small red berries, and light floral notes with a hint of minerality that recalls the limestone substrate. On the palate it is agile and juicy, supported by lively acidity and delicate tannins. The finish is clean and savory, lingering on notes of red fruit with a dry sensation.
Pairings
It pairs easily with charcuterie appetizers such as Veronese soppressa or prosciutto, thanks to its freshness that balances the fat. It goes well with light first courses, like delicate ragù, tomato-based pasta, and vegetable dishes. Fresh and short-aged cheeses find a valid counterpoint in the acidity and fine tannins. Also excellent with local dishes such as Valeggio tortellini with butter and sage.
When to serve it
This red is suitable for everyday enjoyment and informal dinners when you want a precise and easy-drinking wine. Serve it at 14–16°C, with brief decanting if desired to open up the fruit profile and soften the tannins. Best enjoyed within a few years of harvest, but it can evolve for 3–5 years in the cellar, maintaining freshness and definition.
