Description
The Valpolicella Classico Superiore from Allegrini is a red wine from Veneto, primarily produced with Corvina Veronese and Rondinella grapes, hand-harvested in mid-September from the hills of Grola, in Valpolicella. The vineyards, with an average age of 35 years, are grown on mixed soils with a good clay-limestone component and Southeast exposure, ensuring ideal conditions for balanced ripening.
Fermentation takes place in steel for about 9 days at temperatures between 25 and 31°C, to preserve the fruity aromas. The wine is then aged for 6 months in large barrels and subsequently for 2 months in concrete containers, thus completing the process that defines its classic and harmonious style.
On the nose, it is distinguished by its notes of strawberry, cherry, and red plum, enriched with hints of wood and faded rose. On the palate, it is lively and fresh, with a fruity and persistent finish, supported by soft and well-integrated tannins that make it pleasant and inviting.
Perfect with tagliatelle with white rabbit ragù, beef carpaccio, or mushroom risottos.
