Valpolicella Classico Superiore DOC Saustò 2015 Monte dall'Ora

The Valpolicella Classico Superiore Ripasso Saustò di Monte dall'Ora comes to life from the hill of Castelrotto, in the historic area of Valpolicella.

It is obtained from a blend of Corvina, Corvinone, Rondinella, Croatina and Oseleta grapes, harvested by hand in small crates between the last ten days of September and early October. The production of this wine takes place according to the traditional Ripasso technique, with refermentation on the marc of Recioto for 10 days. It ages for 3 months in cask and for another 10 months in bottle.

In the intense ruby red glass, it opens to the nose with clear hints of dried grapes, cherry and plum, leaving room for delicate peppery notes at a later date. On the palate it is concentrated and complex, with a persistence that never ends.

Ideal in the company of aged cheeses, it is perfect as a meditation wine.
