Description

What kind of wine it is

The Valpolicella Ripasso Classico Superiore Collezione Pruviniano by Domini Veneti is a Venetian red wine with an enveloping character and solid structure. Its organoleptic profile combines intensity and precision to offer a persistent and well-defined finish. The winemaking process includes fermentation followed by complete malolactic fermentation and is completed with careful aging that balances smoothness and the aromatic component.

Where it comes from

The origin of this red lies in the hamlet of Prognol, in the heart of Valpolicella Classica, which is characterized by traditional dry stone terraces. The area's climate benefits from proximity to Lake Garda, ensuring a mild and temperate environment ideal for the regular ripening of the grapes. The grapes are sourced in particular from the historic Marano area, a territory that truly reflects the authentic hillside winemaking vocation of the region.

How it is produced

Harvest takes place in October through rigorous manual selection in the vineyard. The must then undergoes primary fermentation and complete malolactic fermentation, essential stages for final stability and taste profile. The maturation phase is divided into several steps: it begins with a resting period in barrels, continues in stainless steel tanks, and ends with bottle aging for about four to six months.

Tasting notes

In the glass it shows an intense ruby red color with great visual depth. The nose develops a refined aromatic profile, characterized by clear notes of cherry and wild berry jam enriched by subtle hints of dried fruit. On the palate, it is warm and full-bodied with an enveloping entry that evolves with decisive progression, closing with a persistent aftertaste that echoes the fruity notes detected on the nose.

Food pairings

The solid structure of this red makes it an ideal accompaniment for red meat-based dishes. It shines particularly alongside slow-cooked, flavorful preparations such as braised dishes and stews, but it also pairs perfectly with classic grilled recipes. Traditionally, it is a natural match for typical Veronese cuisine, particularly enhancing tasty meat dishes or roasts served with rich gravies.

When to serve it

This red is the perfect choice for convivial occasions featuring robust meat menus, especially during the cooler months of the year. Serving at the right temperature allows its fruity texture and pleasant enveloping sensation to fully express themselves. Thanks to the attentive maturation process in barrels, steel, and glass, it boasts remarkable integrity, enabling it to evolve positively even after a suitable period of cellar aging.
