Description
The Valpolicella Ripasso Classico Superiore of Tenute Salvaterra was born in the vineyards of the splendid Prun valley, cultivated according to principles of eco-sustainability.
It is made with a blend of Corvina, Rondinella and Corvinone grapes, harvested by hand in the first half of October and then subjected to soft pressing. Fermentation takes place at a controlled temperature of 18-20 ° C, and is followed by a fermentation on Amarone pomace, from which sugars and most of its complexity derive. Before being placed on the market, it ages almost entirely in wood, between barriques and large barrels.
Ripasso Classico has an intense ruby red color. It is characterized on the nose by its spicy aroma, with hints of cherry and black currant. In the mouth it shows elegant and very harmonious in youth, with fruity sensations that accompany towards a complex finish.
Particularly suitable for tasty dishes such as game, red meats and aged cheeses, this Ripasso also accompanies moments dedicated to meditation and rest very well.
