Description
The Valpolicella Ripasso Superiore di Sartori comes from vineyards located on the Veronese hills of the historic area of Valpolicella.
The fermentation of the must takes place in controlled temperature conditions for 8-10 days. The "ripasso" technique is then carried out, which consists of a second fermentation on the marcs of Amarone. After malolactic fermentation, the wine ages for 18-24 months in oak barrels of various sizes and further bottled for another 6 months.
Intense ruby red wine with garnet reflections, it shows fine aromas of cherry jam, toasted, vegetable and spicy notes. On the palate it is soft and warm, structured and with a good persistence on the palate.
It is ideal in the company of game dishes, roasted meats and tasty cheeses.
